Peruvian cuisine blends Japanese, Chinese, Criollo, and Andean traditions, all enriched by the country's remarkable biodiversity. From the Altiplano and Andes mountains to the Amazon rainforest and Pacific coast, Peru's diverse landscapes give birth to an incredible range of flavors found nowhere else.

Gaston Acurio of Astrid y Gaston first brought Peruvian cuisine to the world's attention. In his wake, chefs like Virgilio Martinez, Rafael Ostering and Jaime Pesaque stepped forward, turning Lima into a city where food lovers now make pilgrimages.

In 2023, World's 50Best named Central the best restaurant in the world. Kjolle, Maido and Mayta also earned their places in the top 50 - a testament to Peru's culinary evolution.

NAZKA is fortunate to have chef Koosh Kothari at its helm, who developed his craft in the kitchens of both Central and Kjolle before bringing this vibrant culinary approach to Amsterdam.

Koosh Kothari

Chef Koosh Kothari brings his experience from Lima's culinary elite - including Merito, Kjolle, and Central (named the world's best restaurant in 2023 by World's 50Best). Under his direction, NAZKA has earned recognition from prestigious guides including Michelin and Gault&Millau.

Koosh embodies what we call Pan-Peruanismo - Peruvian cuisine's natural evolution as it travels beyond borders. This approach honors Peru's culinary foundations while embracing new influences and ingredients. At NAZKA, it comes to life through Koosh's thoughtful integration of Dutch seasonal produce and subtle elements from his Indian heritage.

The result is a dining experience that respects tradition while remaining dynamic and surprising - dishes that tell Peru's story while continuing to write new chapters.

plant-forward approach

At NAZKA, we embrace a thoughtful approach to sustainability. While we're not claiming to have a fully circular food system, and we certainly honor the traditional Peruvian use of fish, fowl, and meat, we're committed to reducing our environmental impact.

Our menu leans plant-forward by design. We've developed a vegan menu we're particularly proud of, and even our regular offerings feature vegetables prominently. Reducing food waste comes naturally to our team, many of whom grew up in places where food is valued as a precious resource. Whenever possible, we source ingredients from producers in the Netherlands and across Europe.

That said, importing select products from Peru is both necessary and intentional. We believe Peru should benefit from the global appreciation of its cuisine - authentic Peruvian gastronomy shouldn't be entirely separated from its cultural origins. And interestingly, not every local product actually has a smaller ecological footprint than its Peruvian counterpart.

Our challenge is finding the balance: bringing authentic Peruvian flavors to Amsterdam while respecting both environmental responsibility and cultural heritage. It's a balance our chef, with his unique background spanning India and Peru, navigates with creativity and purpose each day.

This version preserves the thoughtful discussion of your sustainability philosophy while maintaining the sophisticated yet approachable tone we've established.

ABOUT THE FOUNDER

Raul Lansink

Raul Lansink founded NAZKA as a bridge between his Dutch life and Peruvian heritage. Though raised in the Netherlands, Peru's flavors were always present through his mother's cooking and family visits to Lima, where his grandmother served memorable Criollo feasts around a bustling table.

While the memories of those family gatherings may have faded over time, the aromatic spices from his abuelita's kitchen remained vivid. After building a career in advertising and consultancy, Raul felt drawn back to these culinary roots, leading him to establish Amsterdam's first modern Peruvian restaurant.

The passion for Peruvian cuisine runs in the family - Raul's sister, Katinka Lansink, has become an ambassador for Peru's food culture through her cookbooks "Mi Casa Peru" and "Cocina Nikkei."
